Application of automation in bakery processes

Industrial bakeries often run at high volumes and short cycle times, where precision in every process component is essential. Variations in temperature, mixing times or baking times can have a direct effect on product consistency, quality and food safety.

Gerbin Control’s automation solutions control all process steps precisely and repeatably. Think of automating mixers, proofing cabinets, ovens, conveyors, cooling zones and packaging units. Linking all parts of the line within a single control system creates a uniform production environment with optimal control and traceability.

Custom engineering and manufacturing

Every bakery is different – variations in products, space, equipment and requirements require a specific approach. That’s why Gerbin Control does not provide standard solutions, but control systems that are completely tailored to the customer’s setup and production needs.

In design, we take into account recipe settings, hygiene guidelines, speed synchronization between machine modules and the possibility of central control. Each system is designed in EPLAN, built with high-quality components, and extensively tested for functionality, safety and efficiency before it goes to the production floor.

Our automation goes beyond controlling individual machines. We provide full line synchronization, with all parts working together in the correct order and timing. This eliminates delays, improves flow and prevents waste or product accumulation.

Even recipe changes or line adjustments can be made quickly via the HMI or central control point, without manually reconfiguring multiple machines.

Within the food industry, there are strict requirements for food safety, traceability and consistency. Our systems take into account temperature recording, critical control points (HACCP), and log relevant production data for reporting or quality control.

Thus, automation supports not only the process itself, but also the assurance of food safety and compliance with laws and regulations.

We build our systems with simplicity in maintenance and operation in mind. Clear signal paths, a clear HMI and logically laid out panels ensure quick diagnosis in case of any malfunctions.

We also provide support during installation and commissioning, and provide customers with clear documentation and aftercare. This keeps production running – and quality assured, even with varying production schedules.

Frequently asked questions about bakery line automation

What exactly does bakery line automation entail?

Bakery line automation is the automation of the entire baking process within an industrial bakery. This includes mixing ingredients, kneading and rising dough, baking, cooling, transporting and packaging the finished product. With one integrated control system, every part of the line is controlled accurately and consistently, leading to increased production efficiency and consistent product quality.

Virtually any part of the process can be included in automation. Think of dough mixers, dividing and bulking machines, proofing cabinets, ovens, refrigerated transports, cutting units, packaging machines and palletizing systems. Gerbin Control takes care of linking all these processes into one integrated control system, including operation via a central HMI.

Automation ensures consistent product quality, fewer manual operations, fewer errors and higher production rates. In addition, the line becomes more controllable, recipes can be set or adjusted digitally and insight is gained into production data. This makes it possible to make adjustments faster and to meet food safety and traceability requirements.

Yes, Gerbin Control also offers solutions for modernizing or expanding existing production lines. We can incorporate existing machines into a new control system or replace them incrementally. Thanks to our flexible approach, it is possible to automate in phases, without having to stop production for long periods of time.

Our control systems take into account HACCP requirements, temperature recording and critical control points. Important parameters are logged and are retrievable for audits or quality control. We also use industrial components suitable for hygienic environments, with the appropriate degree of protection (IP) and materials.

After delivery, we provide full support, including assistance with commissioning, adjustment of settings, and technical help with malfunctions. We provide clear electrical diagrams, operating instructions and maintenance tips. If required, we can also provide training for operators or technical staff to ensure that the system is used to its full potential.
